Please tell me what kind of Asian knife set is this – contemporary double bevel or traditional single-faceted?
Please only answer if I know I'm talking about Millennium Global Chef Knife Block 6-piece set I bought from (and within) Australia Here is the link: http://www.everten.com.au/product/Global-Knife- Block-Set-Me + Sharpener.html i also purchased (from overseas) Election of a chef knife sharpener for Asian Knives, model 316, electric chair. The instructions suggest a procedure clearly different depending on whether the knife is a knife double facets (contemporary style) or traditional single bevel blade of a single sheet. The manual says that most blade popular in Asia, as was (nakiri) and Santoku blades are defined as contemporary in the U.S. Although I do not know how relevant is Australia. I just want know why the approach procedure is different for the two types of knife. Thanks

Basically Blade profile is like a chisel. I have used most of the knives in this set and more, there is no chisel bevels.
