What dishes we have with dinner tonight?

I bought a pork shoulder yesterday and decided to cook for dinner tonight. I marinated for the night in a massage in the olive oil, vinegar, minced garlic, salt, pepper and oregano. I've got it in the oven to 325 and cook for 5 hours with foil. 1 additional hour without foil. It smells delicious. My mom and I were talking, and we have a few side dishes tonight. We want to do something different (not normal of peas and corn). I would like to have two dishes and a salad and dessert. Any ideas?

Here are some other ideas: homemade garlic bread: 1 cube 3.4 real butter cloves garlic, sauté chopped, about 5 minutes. Spread on slices of fresh French bread with a pastry brush. Cheesy Hashbrown Casserole 32 oz frozen hash browns ½ cup margarine 8 ounces Velveeta cheese 1 can cream of mushroom soup ½ small onion, diced 16 oz sour cream Salt and pepper to taste 2 cups corn flakes Preheat oven to 350. Combine first 7 ingredients and spread in a greased casserole. Top with crushed cornflakes. Baking 45 minutes. Fancy cream corn ½ pound bacon, chopped 16 oz frozen sweet corn, thawed 1 cup whipping cream of half and half 1 tablespoon cornstarch salt and pepper to taste Cook bacon until crisp. Add corn and stir for 5 minutes. Mix one-half and half with cornstarch. Add the cornstarch mixture, salt and pepper. Stir until thickened and bubbly. Mashed potatoes cut, cube and boil 5 pounds Russet potatoes to the largest cube that you can find breaks when you put a fork through it. Drainage. Use a bucket full of real butter cream and light enough to be gentle. Puree with hand mixer until no lumps. Be patient, it may take a while. Yummy! Best Fancy Mashed Potatoes 5 pounds of mashed potatoes peeled, cooked 1 stick real butter 8 ounces cream cheese 8 oz half cream and salt and pepper, medium 1 / 2 to 1 cup grated Sharp Mash the potatoes with butter and a little half and half. Add the remaining ingredients, except cheese, and continue to puree until cheese is melted and mashed potatoes are soft. Put into a saucepan and cover with strong cheese.
